A Fun Recipe – Cherry Fizz Candy

It is time to start baking for Christmas!  We do a fun extended family and friends Christmas candy and cookie making night each year.  We have our standard favorites: fudge, buckeyes, chocolate dipped everything.  Nothing says Christmas like pulling out my Grammy’s Marshmallow Fudge recipe.   Some years we like to try something new.  Sometimes it works out.  Sometimes not.  This year I came across a recipe in Saveur that has some pizzazz and fits the Christmas candy theme – Cherry Fizz Candy!  It is like homeade pop rocks, but has more of a tangy fizz than a pop.

Cherry Fizz Candy

Ingredients

1 cup plus 3 Tbsp. sugar
2 tbsp. light corn syrup
12 tsp. baking soda
34 tsp. cherry-flavored Kool-Aid or other drink mix
12 tsp. powdered citric acid or 3 Tbsp. lemon juice

Instructions

Line a baking sheet with parchment. In a saucepan, combine the sugar with the corn syrup, and 2 12 tablespoons water. With a candy thermometer, and bring to a boil over medium heat. Cook the syrup, without stirring, until the thermometer reads 300°, 8 to 10 minutes.
Remove the pan from the heat and carefully stir in the baking soda, Kool-Aid, and citric acid. Quickly pour the syrup onto the prepared baking sheet in one move, then let stand to cool completely. Smash the candy into bite-size pieces, and store in an airtight container for up to 2 weeks.
